Blueberry Muffins

Blueberries are a popular fruit that is part of the heather family- closely related to other berries such as cranberries and huckleberries. They have a great sweet taste and can be eaten fresh, frozen or juiced. April marks the beginning of their peak season.

As a high nutrient ingredient, blueberries are rich in:

- Antioxidants: lowers levels of bad bacteria (ie. cholesterol)

- Vitamin K: helps to maintain strong bones and reduces risk of osteoporosis

- Vitamin C: to boost your immune system

- Manganese: reduces inflammation and regulates blood sugar levels

One great way to prepare blueberries is to bake them in muffins.

Blueberry Muffins Recipe:

Blueberry-Muffins

Prep Time15 mins Cook Time20-25 mins Total Time35-40 mins

Ingredients:

  • 1-1 ½ cups of flour
  • ¾ cup of white sugar
  • ½ teaspoon of salt
  • 2 teaspoon of baking powder
  • 1/3 cup of vegetable oil
  • 1 egg, beaten
  • 1/3 cup of milk
  • 1 cup fresh blueberries, washed

Directions:

  1. Preheat over to 400 degrees F
  2. Grease the muffin cups in a muffin pan or line the cups with muffin liners
  3. In a large mixing bowl, combine the flour, white sugar, salt, and baking powder
  4. Sift the dry ingredients 2 times
  5. Add in the vegetable oil, egg, milk with the dry ingredients and mix together
  6. Fold in the blueberries and combine with all ingredients
  7. Pour batter into muffin cups (about 1/2-3/4 full)
  8. Bake in preheated oven for 20-25 minutes, or until done
  9. Sit and cool for 10-15 minutes
  10. Serve and enjoy
