Apricot Glazed Chicken

Apricots are beautiful orange-colored fruits that grows in various parts of the world including North America, South America and New Zealand. The height of the growing season in North America is May-August- making it known as a summer fruit. It is mostly enjoyed fresh, dried or canned.

Apricots are a nutritious fruit that is low in calories that contains essential vitamins and minerals such as:

- Vitamin A: helps to maintain good eye health

- Vitamin C: helps to support the immune system

- Potassium: helps to support your muscles and cells

A tasty way to prepare apricots is to make jam that can be used as a glaze on chicken. *Please note that below I include a recipe for both the jam and the chicken. You can skip making the jam, and use store-bought apricot jam which will cut down the cooking time in half.

Apricot Glazed Chicken Recipe:

    Apricot Jam -

  • 2 lbs of apricots washed, peeled, pitted and sliced
  • 1 cup of sugar
  • ¼ cup of lemon juice
  • ½ cup of water

    Directions (for Apricot Jam) -

  1. Wash, peel, pit and slice the apricots
  2. Put the apricots in a pot with the water on low heat, stirring constantly for 10 minutes or when the apricots turn into a mash
  3. Once mashed, add in the sugar and lemon juice on low heat for 30-40 minutes or until everything thickens, stirring occasionally

    Apricot Glazed Chicken -

  • 4 boneless, skinless chicken breasts or thighs
  • Season with salt, pepper and others of your choice
  • 8 oz of apricot jam


  1. Preheat oven to 450 degrees F
  2. Line a baking sheet with nonstick foil
  3. Season chicken
  4. Spoon some of the apricot jam on top of the chicken
  5. Roast for 15 minutes
  6. Remove baking sheet from the oven and spoon the remaining apricot jam on the chicken
  7. Return to the oven and roast for another 15 minutes or until the chicken is cooked through
  8. Serve warm with a side dish of your choice!
