Blueberries are a popular fruit that is part of the heather family- closely related to other berries such as cranberries and huckleberries. They have a great sweet taste and can be eaten fresh, frozen or juiced. April marks the beginning of their peak season.
As a high nutrient ingredient, blueberries are rich in:
- Antioxidants: lowers levels of bad bacteria (ie. cholesterol)
- Vitamin K: helps to maintain strong bones and reduces risk of osteoporosis
- Vitamin C: to boost your immune system
- Manganese: reduces inflammation and regulates blood sugar levels
One great way to prepare blueberries is to bake them in muffins.
Blueberry Muffins Recipe:

Ingredients:
- 1-1 ½ cups of flour
- ¾ cup of white sugar
- ½ teaspoon of salt
- 2 teaspoon of baking powder
- 1/3 cup of vegetable oil
- 1 egg, beaten
- 1/3 cup of milk
- 1 cup fresh blueberries, washed
Directions:
- Preheat over to 400 degrees F
- Grease the muffin cups in a muffin pan or line the cups with muffin liners
- In a large mixing bowl, combine the flour, white sugar, salt, and baking powder
- Sift the dry ingredients 2 times
- Add in the vegetable oil, egg, milk with the dry ingredients and mix together
- Fold in the blueberries and combine with all ingredients
- Pour batter into muffin cups (about 1/2-3/4 full)
- Bake in preheated oven for 20-25 minutes, or until done
- Sit and cool for 10-15 minutes
- Serve and enjoy
