Corn and Black Bean Salsa

Sweet corn is a vegetable cereal grain that is native to Central America, but grows in various parts of the world. This summer food is typically yellow, but can come in other colors such as blue, white, orange and black. It is a versatile food found in a variety of cuisines and meals such as soup, chowder, stew and stir-fry dishes and can be consumed fresh off the cob, wrapped around a tamale or in popular snacks such as popcorn or tortilla chips.

Corn is a starchy vegetable that contains essential vitamins and minerals such as:

- Fiber: helps to support digestion

- Magnesium: helps to support blood and bone health

- Potassium: helps to support your muscles and cells

A great way to eat corn as the star ingredient of a salsa!

Corn & Black Bean Salsa Recipe:

  • 1 (15 oz.) can of whole kernel corn, drained
  • 1 (15 oz.) can of black beans, drained and rinsed
  • 1 pint of cherry tomatoes, diced
  • 1 red onion, diced
  • 1-2 cloves of garlic, minced
  • 2 tablespoons of fresh cilantro, chopped
  • 1/3 cup of olive oil
  • Salt and pepper to taste


  1. In a large bowl, combine the corn, black beans, cherry tomatoes, red onion, garlic and cilantro
  2. Add the olive oil, salt and pepper
  3. Stir to combine all of the ingredients
  4. Cover and let it chill in the refrigerator for 30 minutes
  5. Serve with a side of tortilla chips or a topping to a piece of grilled meat or fish
