Cranberry Glazed Sweet Potatoes

Sweet potatoes, only a distant relative of regular potatoes, are a sweet root vegetable that is typically harvested in the early fall (September-early October). They are often confused with yams, but are a completely different vegetable. Sweet potatoes can come in a range of colors such as orange, white, yellow, purple and red. When you purchase them, make sure they have a firm skin and should be stored in a cool dark place (not the refrigerator). Sweet potatoes serves as a perfect fall side that can be mashed, fried or roasted.

Sweet Potatoes contain essential vitamins and minerals such as:

- Vitamin C: to support the health of your immune system

- Vitamin A: to support your eye health

- Fiber: to support the health of your digestive system

My favorite way to eat them are oven-roasted with a tart glaze.

Cranberry Glazed Sweet Potatoes Recipe:

Ingredients:

  • 5 medium sweet potatoes, peeled and cut into 1-inch cubed pieces
  • 2 tablespoons of olive oil
  • Salt and Pepper
  • 1 cup of cranberry juice
  • 2 tablespoons of brown sugar
  • 2 tablespoons of butter
  • ½ teaspoon of cinnamon

Directions:

  1. Preheat oven to 400 degrees F
  2. In a large bowl, toss the sweet potatoes with the olive oil
  3. Spread the oiled sweet potatoes on a baking sheet
  4. Season with salt and pepper
  5. Roast the sweet potatoes in the oven for 30-40 minutes, or until golden brown
  6. In a saucepan over medium-high heat, reduce the cranberry juice by half
  7. Add in the brown sugar, butter and cinnamon, stirring until dissolved
  8. Place the roasted sweet potatoes in a large bowl
  9. Pour the glaze over the sweet potatoes
  10. Toss the sweet potatoes in the glaze to coat completely
  11. Serve and enjoy
